Ingredients
  • 1/4 c butter (real butter)
  • 1 c sugar (I use 1/2 Splenda)
  • 2 eggs
  • 1 c milk ( 2%)
  • 1/4 c self-rising flour
  • 1 c flaked coconut
  • 3/4 c chopped pecans

Directions
  1. Cream butter and sugar. Add eggs one at a time, mixing well after
  2. each. Add milk and flour, blending well. Stir in coconut and pecans.
  3. Pour into lightly greased 9" pie pan, and bake in preheated 350 oven
  4. for 35 minutes, or until lightly browned.

Shirley, this looks fantastic and so easy. I am a good cook, but making pie crusts are not my thing. Will try this recipe in the next month and see if my guy will like it. He loves coconut anything! I just joined here and I am gonna love this group.
