Lentil Savory Roast No Ewwwwws Out There Recipe
Again I like lentils. Try this on for size. If you like hamburger pie you'll like this healthier version. No ewwwwws til you try it.

Ingredients
  • 1 cup lentils
  • 2 tablespoons grated parmesan or any sharp hard aged cheese
  • 1 cup rice (or small pasta if you prefer)
  • herbs of your choice for flavor (herbs de provence, rosemary and thyme, sage
  • 1 garlic clove minced (I like garlic too!) but you can leave this out of you prefer
  • ½ cup peeled seeded tomatoes
  • salt to taste
  • ¼ cup wheatmeal (wheatmeal has most of the bran and germ as opposed to wheat flour which has more but you can use wheat flour, it will be thicker or ground oatmeal and it will be really thick)
  • mashed potato crust (from the extra mashed potatoes from the night before or a new batch)
  • 1 onion (minced)
  • 1 tablespoon peanut butter

Directions
  1. Cook lentils 30 minutes, drain well
  2. boil rice (or pasta) and onion together til done
  3. Add all of the ingredients together with the finished lentils and rice (pasta)
  4. Place mixture in buttered baking dish with mashed potato crust 1/2" thick on top
  5. Add a few knobs of cheddar or sharp cheddar or colby jack cheese (can't have too much cheese) pressed and covered on the top of the casserole
  6. Bake 1 hour at 325 degrees f
  7. Garnish with parsley.

I can't say eweeeeeeeeeeeeee? Really I would like this.. I don't have prob with chol.. but it could be the way I eat... Lots of veggies and grains and little meat and cheese.. Good post!
