Lentil savory roast no ewwwwws out there

- 1 cup lentils shopping list
- 2 tablespoons grated parmesan or any sharp hard aged cheese shopping list
- 1 cup rice (or small pasta if you prefer) shopping list
- herbs of your choice for flavor (herbs de provence, rosemary and thyme, sage shopping list
- 1 garlic clove minced (I like garlic too!) but you can leave this out of you prefer shopping list
- ½ cup peeled seeded tomatoes shopping list
- salt to taste shopping list
- ¼ cup wheatmeal (wheatmeal has most of the bran and germ as opposed to wheat flour which has more but you can use wheat flour, it will be thicker or ground oatmeal and it will be really thick) shopping list
- mashed potato crust (from the extra mashed potatoes from the night before or a new batch) shopping list
- 1 onion (minced) shopping list
- 1 tablespoon peanut butter shopping list
How to make it
- Cook lentils 30 minutes, drain well
- boil rice (or pasta) and onion together til done
- Add all of the ingredients together with the finished lentils and rice (pasta)
- Place mixture in buttered baking dish with mashed potato crust 1/2" thick on top
- Add a few knobs of cheddar or sharp cheddar or colby jack cheese (can't have too much cheese) pressed and covered on the top of the casserole
- Bake 1 hour at 325 degrees f
- Garnish with parsley.
