Ingredients
  • 1 cut up broiler-fryer chicken, skinned (sorry folks)
  • 1 cup uncooked oatmeal
  • 1/3 cup grated parmesan cheese
  • 1/2 tsp salt or 1 tbl lemon pepper (for those that don;t know lemon pepper is a nice substitute for salt
  • 1/2 tsp paprika
  • 1/8 tsp pepper
  • 2 cloves of garlic, minced really really fine almost mashed, ok you can mash it
  • 1/3 cup of milk
  • 1/4 cup of melted margarine or olive oil cooking spray (make your own with a spray bottle and your favorite evoo)
  • cherry tomatoes

Directions
  1. In a blender or food processor place oatmeal, parmesan, paprika, salt (or lemon pepper) and pepper.
  2. cover and blend or pulse until thoroughly mixed about a minute or so
  3. in a shallow dish place the oatmeal mixture
  4. in a seperate shallow dish place the milk, and garlic and mix (let stand a few minutes for the flavor of the garlic to come out.
  5. place chicken one piece at a time in the oatmeal mixture
  6. dip in the milk mixture
  7. dip again in the oatmeal mixture
  8. in a large shallow baking pan place chicken and drizzle with margarine or spray with evoo (extra virgin olive oil)
  9. bake at 375 degrees F for 1 hour or until a fork can be inserted into the chicken with ease and the juices are clear (do this in the thickest part of a thigh piece)
  10. garnish with parsley and cherry tomates.
  11. Try this with Kats_zoo killer tomato and cucumber salad

Sounds very good. I do so miss eating the chicken skin though. Darn it.

None of my daughters eat the skin of the chicken. Bet they will like this. Thnxs for something healthy!!
