Heart Smart baked chicken

- 1 cut up broiler-fryer chicken, skinned (sorry folks) shopping list
- 1 cup uncooked oatmeal shopping list
- 1/3 cup grated parmesan cheese shopping list
- 1/2 tsp salt or 1 tbl lemon pepper (for those that don;t know lemon pepper is a nice substitute for salt shopping list
- 1/2 tsp paprika shopping list
- 1/8 tsp pepper shopping list
- 2 cloves of garlic, minced really really fine almost mashed, ok you can mash it shopping list
- 1/3 cup of milk shopping list
- 1/4 cup of melted margarine or olive oil cooking spray (make your own with a spray bottle and your favorite evoo) shopping list
- cherry tomatoes shopping list
How to make it
- In a blender or food processor place oatmeal, parmesan, paprika, salt (or lemon pepper) and pepper.
- cover and blend or pulse until thoroughly mixed about a minute or so
- in a shallow dish place the oatmeal mixture
- in a seperate shallow dish place the milk, and garlic and mix (let stand a few minutes for the flavor of the garlic to come out.
- place chicken one piece at a time in the oatmeal mixture
- dip in the milk mixture
- dip again in the oatmeal mixture
- in a large shallow baking pan place chicken and drizzle with margarine or spray with evoo (extra virgin olive oil)
- bake at 375 degrees F for 1 hour or until a fork can be inserted into the chicken with ease and the juices are clear (do this in the thickest part of a thigh piece)
- garnish with parsley and cherry tomates.
