How to make it

  • In a blender or food processor place oatmeal, parmesan, paprika, salt (or lemon pepper) and pepper.
  • cover and blend or pulse until thoroughly mixed about a minute or so
  • in a shallow dish place the oatmeal mixture
  • in a seperate shallow dish place the milk, and garlic and mix (let stand a few minutes for the flavor of the garlic to come out.
  • place chicken one piece at a time in the oatmeal mixture
  • dip in the milk mixture
  • dip again in the oatmeal mixture
  • in a large shallow baking pan place chicken and drizzle with margarine or spray with evoo (extra virgin olive oil)
  • bake at 375 degrees F for 1 hour or until a fork can be inserted into the chicken with ease and the juices are clear (do this in the thickest part of a thigh piece)
  • garnish with parsley and cherry tomates.
