Ingredients
  • Pick of the Chick -- 1 package, 2 if you need more than that.
  • 2 cups flour
  • 1 T parsley
  • 1t garlic salt
  • 1t fresh ground pepper
  • 1t seasoning salt
  • 1/2 t cinnamon (trust me, this adds yummy flavor!
  • 1t paprika
  • any other spice you want to throw in in moderation
  • vegetable oil

Directions
  1. In a large frying pan (cast iron is great, but any large dutch oven type pan will do), pour oil until it is about 1/2 inch deep.
  2. Heat oil over medium high heat while you prepare the chicken.
  3. Mix all the dry ingredients in shallow baking dish.
  4. Dredge chicken pieces in dry mix, making sure all skin is covered, and place on a plate. Save dry mix and set aside.
  5. Place chicken pieces in the oil and turn heat down to medium.
  6. Do not cover.
  7. Turn Chicken pieces every 10 minutes, making sure all coated sides get to sizzle in the oil and brown a little
  8. After all sides are a bit fried and browned, take each piece with tongs, let excess oil drip off and then redredge them in the dry mix.
  9. Repeat frying technique until you have cooked the chicken for 40-45 minutes total. Check a breast or thigh by poking it with a fork. If the juice runs out clear, your chicken is done. Wings will be done sooner.
  10. Drain on a few layers of paper towels on a plate.
  11. Enjoy!

This is just like the (yummy) recipe I use - except for the cinnamon. I'm going to take your advice, and add some the next time I make it! :-)


When my daughter and son-in-law get here, I'm going to try this. Fried chicken is one of Mandy's favorite dinners.


This sounds wonderful. I bet the cinnamon adds a nice touch. It goes well with pork as well, I would think it would be good with chicken.
