How to make it

  • In a large frying pan (cast iron is great, but any large dutch oven type pan will do), pour oil until it is about 1/2 inch deep.
  • Heat oil over medium high heat while you prepare the chicken.
  • Mix all the dry ingredients in shallow baking dish.
  • Dredge chicken pieces in dry mix, making sure all skin is covered, and place on a plate. Save dry mix and set aside.
  • Place chicken pieces in the oil and turn heat down to medium.
  • Do not cover.
  • Turn Chicken pieces every 10 minutes, making sure all coated sides get to sizzle in the oil and brown a little
  • After all sides are a bit fried and browned, take each piece with tongs, let excess oil drip off and then redredge them in the dry mix.
  • Repeat frying technique until you have cooked the chicken for 40-45 minutes total. Check a breast or thigh by poking it with a fork. If the juice runs out clear, your chicken is done. Wings will be done sooner.
  • Drain on a few layers of paper towels on a plate.
  • Enjoy!

    This sounds wonderful. I bet the cinnamon adds a nice touch. It goes well with pork as well, I would think it would be good with chicken.

    When my daughter and son-in-law get here, I'm going to try this. Fried chicken is one of Mandy's favorite dinners.

    This is just like the (yummy) recipe I use - except for the cinnamon. I'm going to take your advice, and add some the next time I make it! :-)
