Fried Chicken-- Just Like My Southern Belle Mammas

- Pick of the Chick -- 1 package, 2 if you need more than that. shopping list
- 2 cups flour shopping list
- 1 T parsley shopping list
- 1t garlic salt shopping list
- 1t fresh ground pepper shopping list
- 1t seasoning salt shopping list
- 1/2 t cinnamon (trust me, this adds yummy flavor! shopping list
- 1t paprika shopping list
- any other spice you want to throw in in moderation shopping list
- vegetable oil shopping list
How to make it
- In a large frying pan (cast iron is great, but any large dutch oven type pan will do), pour oil until it is about 1/2 inch deep.
- Heat oil over medium high heat while you prepare the chicken.
- Mix all the dry ingredients in shallow baking dish.
- Dredge chicken pieces in dry mix, making sure all skin is covered, and place on a plate. Save dry mix and set aside.
- Place chicken pieces in the oil and turn heat down to medium.
- Do not cover.
- Turn Chicken pieces every 10 minutes, making sure all coated sides get to sizzle in the oil and brown a little
- After all sides are a bit fried and browned, take each piece with tongs, let excess oil drip off and then redredge them in the dry mix.
- Repeat frying technique until you have cooked the chicken for 40-45 minutes total. Check a breast or thigh by poking it with a fork. If the juice runs out clear, your chicken is done. Wings will be done sooner.
- Drain on a few layers of paper towels on a plate.
