The vinaigrette for the famous Salade Niçoise from the French Riviera. Up to you to find other uses..

Ingredients
  • 1/3 cup lemon juice
  • 1 cup extra virgin olive oil
  • 2 teaspoons Dijon mustard
  • 1 minced garlic clove
  • 1/4 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon cracked black pepper

Directions
  1. Combine all the vinaigrette ingredients in a jar and shake to emulsify.
  2. Allow the vinaigrette to develop its flavors for at least an hour before using.
  3. Always shake before using.
