Xtra Moist Chocolate Cake Recipe
For the chocoholics and those with a sweet tooth (like me). A one layer cake with a moist, sticky, chocolaty frosting. Y-U-M-M-Y!!!!!

Ingredients
  • Cake:
  • 500 ml (2 cups)cake flour
  • 350 ml (1 1/2 cup)sugar
  • pinch of salt
  • 125 g (1/2 cup) butter or margarine
  • 125 ml (1/2 cup) cocoa powder
  • 5 ml (1 teaspoon) baking soda
  • 125 ml (1/2 cup) buttermilk
  • 2 eggs
  • 250 ml (1 cup) water
  • Frosting:
  • 75 ml (1/4 cup + 1 heaped tablespoon) butter or margarine
  • 75 ml (1/4 cup + 1 tablespoon) buttermilk
  • 30 ml (2 heaped tablespoons) cocoa powder
  • 375 ml (1 1/2 cup) icing sugar
  • 5 ml (1 teaspoon)vanilla essence

Directions
  1. Sift the flour, sugan and salt together.
  2. Heat up the butter, water, oil and cocoa.
  3. Let it cool down a bit.
  4. Mix the buttermilk and baking soda.
  5. Beat the eggs into the buttermilk mixture.
  6. Mix the flour and buttermilk mixtures together.
  7. Bake in a square baking tin at 200 degrees C (390 deg F) for 20 minutes.
  8. Frosting:
  9. Heat up the butter, buttermilk and cocoa.
  10. Bring to the boil.
  11. Remove from stove.
  12. Sift in the icing sugar while stirring.
  13. Stirr in the vanilla essence.
  14. Pour hot sauce over hot cake.
  15. Let it cool down in the fridge.
  16. Serve.

Going to see if I can bribe, errrr, ask my daughter to make this. Me and baking is like turning lead into gold, it just doesn't happen. Looks good going in the oven, and coming out it's "Houston, we have a problem.."

If i used regular milk instead of buttermilk, would that make the cake a lot different?

Where is the oil in this recipe? The directions say to heat it with the butter, cocoa, and water, but I can't see how much to use. When in doubt, use 1/2 cup. :-) That's what I'll try (unless I hear back from you about it.)
