Stuffed French Toast

- 8 slices sandwich-cut bread shopping list
- butter or margarine shopping list
- 2 bananas shopping list
- 1 tsp Chelsea White sugar shopping list
- 4 eggs shopping list
- 1/2 cup milk shopping list
- 1 tsp ground cinnamon shopping list
- 2 tbsp canola oil shopping list
- 50g butter shopping list
- Maple or golden syrup to serve shopping list
- icing sugar to dust shopping list
How to make it
- Spread butter on bread slices. Slice bananas into long, thin strips and make into banana sandwiches, sprinkling with a little white sugar and securely pressing together. Beat eggs and milk together. Add cinnamon and pour into a shallow plate. Soak the banana sandwiches in the mixture.
- In a frypan, heat oil and butter together and when sizzling, add sandwiches. Cook until crispy and browned. Drain on paper towels and keep warm in the oven until the whole batch is cooked.
- Cut each sandwich in half and serve with maple syrup and fresh fruit. Dust with icing sugar if desired.
