How to make it

  • Rinse rice several times until rinse water runs clear.
  • Sauté garlic and herbs in olive oil until fragrant about two minutes.
  • Add rice and sauté another three minutes.
  • Add artichoke hearts and sauté another minute.
  • Add water and bring to a boil.
  • Cover then reduce heat and cook about fifteen minutes.
  • Turn off burner and let sit five more minutes.
  • Fluff with fork.

    My girlfriend and I have been to the Garlic Festival in Gilroy, Calif. several times (it's in July and it's hot!) but we have never been to the artichoke festival in Carpenteria, Calif. yet. luv artichokes!

    Artichoke pilaf sounds very yummy, nice and simple. Cant wait to try it!! I was wondering how big or little of a difference you think it would make using fresh herbs instead of dried. I rarely have dry herbs on hand, always fresh. (i think it's ment to be the other way around)
