Lemon Chicken Greek Style Recipe
this is an easy one. everything in the pan and then in the oven. I often add a handful of flat leaf parsley with the thyme just before serving. it seems to give it that extra lift on the palette.

Ingredients
  • 1.5 kg chicken pieces
  • 5 or 6 medium potatoes, peeled, coarsely chopped
  • 2 red capsicums, cut in thick slices
  • 2 small red onions cut into wedges
  • approx. 5 sprigs of thyme
  • 125 cup of pitted olives
  • 2 lemons in quarter
  • 1/2 cup of lemon juice
  • 3/4 cup of white wine
  • 1/2 cup olive oil
  • salt and pepper to taste
  • Extra Thyme to garnish

Directions
  1. Cut slits 2cm into chicken pieces, place chicken into large baking dish.
  2. add potatoes, capsicums, olives, onions, lemon wedges and thyme. Season with salt and pepper.
  3. Combine wine, oil and lemon juice in a jug and pour over chicken and vegetables.
  4. Cook uncovered in a hot oven (200C) for an hour. then increase temperature to 240C and cook for a further 30 minute or until chicken is golden brown and tender
  5. Garnish with thyme and serve!
