Crab Cakes with Roasted Red Pepper Sauce

- crab Cakes: shopping list
- 1 cup cracker meal shopping list
- 1 egg beaten shopping list
- 1/2 cup milk shopping list
- 12 ounces lump crab meat, pick through it to find any shells shopping list
- 1 heaping tbsp of crab boil seasoning, I think old bay is the best. shopping list
- 1 tbsp baking powder shopping list
- a handful flat leaf parsley, chopped shopping list
- 1 lemon zested plus 1 lemon cut into wedges shopping list
- 1 rib celery from the heart, finely chopped shopping list
- several drops worchestershire sauce shopping list
- several drops hot sauce, i like cholula brand shopping list
- 2 tbsp mayo shopping list
- vegetable or canola oil for frying shopping list
- For Sauce: shopping list
- 1 8ounce jar roasted red peppers, drained or 1 large freshly prepared one shopping list
- 1 cup mayo shopping list
- 1/2 cup prepared chili sauce shopping list
How to make it
- Place cracker meal in a bowl and make a well in the center of meal.
- Beat egg with milk and pour into well.
- Moisten cracker meal with the egg liquid using the tines of a fork.
- Add crab meat, crab boil seasoning, baking powder, parsley, lemon zest, celery, worchestershire sauce, hot sauce, and mayo.
- Mix all ingredients well and form into 8 3inch patties.
- Add 1/2 inch oil into skillet and heat to medium high temperature.
- Fry cakes about 3-4 minutes on each side and drain onto a paper towel lined plate.
- Cook about 4 cakes at a time so the oil temp doesn't drop too low. The key is to keep the oil hot but not too hot.
- For the Sauce, combined red pepper, 1 cup mayo, and chili sauce in a food processor.
- Pulse or grind the ingreients until smooth.
- Transfer to a serving bowl and serve with the cakes!
