How to make it

  • Place cracker meal in a bowl and make a well in the center of meal.
  • Beat egg with milk and pour into well.
  • Moisten cracker meal with the egg liquid using the tines of a fork.
  • Add crab meat, crab boil seasoning, baking powder, parsley, lemon zest, celery, worchestershire sauce, hot sauce, and mayo.
  • Mix all ingredients well and form into 8 3inch patties.
  • Add 1/2 inch oil into skillet and heat to medium high temperature.
  • Fry cakes about 3-4 minutes on each side and drain onto a paper towel lined plate.
  • Cook about 4 cakes at a time so the oil temp doesn't drop too low. The key is to keep the oil hot but not too hot.
  • For the Sauce, combined red pepper, 1 cup mayo, and chili sauce in a food processor.
  • Pulse or grind the ingreients until smooth.
  • Transfer to a serving bowl and serve with the cakes!
