cajun meatloaf

- 1 whole bay leaf shopping list
- 1/2 tsp.salt shopping list
- 1/2 tsp. cayenne pepper shopping list
- 1/4 tsp. ground pepper 1/4 tspeach of ground cumin and nutmeg shopping list
- i tsp. basil shopping list
- 1/2 tsp. each onion powder and dry mustard shopping list
- 1/8 tsp. allspice shopping list
- 1 Tbs. butter 1/2 cup each onion - bell pepper -celery,, finely chopped shopping list
- 1 tsp. garlic,minced shopping list
- 1 Tbs. each, tobasco & worchestershire shopping list
- 1/4 cup evaporated milk shopping list
- 1# ground beef shopping list
- 1 egg shopping list
- 1/2 cup of bread crumbs shopping list
- 1/4 tsp. liquid smoke shopping list
- 3 Tbs. catsup shopping list
How to make it
- combine the first 11 ingredients and set aside.
- melt butter,over medium heat,add onions,celery,peppers,garlic,tobasco,worcestershire, liquid somke and seasonings. saute till mixture starts to thicken,about 6 minutes. stir and scrape bottom from time to time
- stir in milk and catsup, cook for 2 minutes,remove from heat and let cool down to room tempeture.
- remove bay leaf, in a large bowl put beef, cooled mixture and bread crumbs and mix well by hand.
- bake at 350* for 15 minutes,drain any accumalated fat, return to oven raising tempature to 400*,cook about 25 minutes ,or until done.
- remove from pan and let rest for 5 minutes on a rack so it will be easier to slice
