Ingredients
  • 1 whole bay leaf
  • 1/2 tsp.salt
  • 1/2 tsp. cayenne pepper
  • 1/4 tsp. ground pepper 1/4 tspeach of ground cumin and nutmeg
  • i tsp. basil
  • 1/2 tsp. each onion powder and dry mustard
  • 1/8 tsp. allspice
  • 1 Tbs. butter 1/2 cup each onion - bell pepper -celery,, finely chopped
  • 1 tsp. garlic,minced
  • 1 Tbs. each, tobasco & worchestershire
  • 1/4 cup evaporated milk
  • 1# ground beef
  • 1 egg
  • 1/2 cup of bread crumbs
  • 1/4 tsp. liquid smoke
  • 3 Tbs. catsup

Directions
  1. combine the first 11 ingredients and set aside.
  2. melt butter,over medium heat,add onions,celery,peppers,garlic,tobasco,worcestershire, liquid somke and seasonings. saute till mixture starts to thicken,about 6 minutes. stir and scrape bottom from time to time
  3. stir in milk and catsup, cook for 2 minutes,remove from heat and let cool down to room tempeture.
  4. remove bay leaf, in a large bowl put beef, cooled mixture and bread crumbs and mix well by hand.
  5. bake at 350* for 15 minutes,drain any accumalated fat, return to oven raising tempature to 400*,cook about 25 minutes ,or until done.
  6. remove from pan and let rest for 5 minutes on a rack so it will be easier to slice

This sounds hot. I don't know if I could handle all that heat. It does sound good though.
