Roast squab ok so it is a pigeon

- 2 squabs shopping list
- 1/2 lemon shopping list
- salt and pepper shopping list
- 4 small onions shopping list
- rosemary shopping list
- thyme shopping list
- 1 cup dry white wine shopping list
- 1 cup of mushrooms shopping list
- giblets from the squab finely diced shopping list
How to make it
- rub squabs with lemon and sprinkle with salt and pepper to taste
- inside each squab place 2 small onions cut in hal
- place in an uncovered casserole adding a pinch of rosemary, thyme and wine (again use a wine you would drink)
- cook at 500 degrees F for 15 minutes
- reduce heat to 350 degrees F
- add the finely diced giblets and mushrooms.
- As the wine evaporates add more to keep the bottom of the casserole moist while cooking.
- Place a cover on the casserole and cook 20 minutes more. You may need to adjust the time a little depending on the size of the birds.
- You can also sub small cornish game hens and adjust cooking time accordingly.
