How to make it

  • rub squabs with lemon and sprinkle with salt and pepper to taste
  • inside each squab place 2 small onions cut in hal
  • place in an uncovered casserole adding a pinch of rosemary, thyme and wine (again use a wine you would drink)
  • cook at 500 degrees F for 15 minutes
  • reduce heat to 350 degrees F
  • add the finely diced giblets and mushrooms.
  • As the wine evaporates add more to keep the bottom of the casserole moist while cooking.
  • Place a cover on the casserole and cook 20 minutes more. You may need to adjust the time a little depending on the size of the birds.
  • You can also sub small cornish game hens and adjust cooking time accordingly.

    We use pigeons for target practice for the real game...there wouldn't be enough left to make this...but, if we ever do, I'll try it! ;)
