Easy to make, creamy pasta dish

Ingredients
  • 6-8 Ripe Roma tomatoes
  • 1/2 C butter
  • 1/2 C olive oil
  • 1/2 C Parmesan cheese grated
  • 1/2 C Vodka
  • Hot dried red peppers crushed (small dried) 6-8 to taste
  • 1-2 cloves crushed garlic (1 tsp.)
  • 7 oz Panna cream (or 1/2 pt. heavy whipping cream with a tablespoon of corn starch)
  • 1 lb penne pasta l'dente'
  • Grated Romano cheese to garnish

Directions
  1. Prep:
  2. Cube 6-8 ripe Roma tomatoes set aside
  3. crush the dried red peppers
  4. start pasta water in a 6 qt pan
  5. Put olive oil in 10 in skillet or 4 qt sauce pan melt butter in oil over medium heat
  6. add & saute' garlic and crushed peppers to blend flavor
  7. add tomatoes and cook (stirring occasionally) until tomatoes have broken down and creates a paste
  8. add vodka and Parmesan cheese and continue cooking for 10 minutes over medium heat stirring frequently
  9. Lower heat and add cream stir to blend and thicken if using whipping cream
  10. Add to cooked pasta, blend and serve garnished with Romano cheese
  11. Starting pasta in boiling water when Vodka is added finishes everything at about the same time.
