Penne con Vodka

- 6-8 Ripe roma tomatoes shopping list
- 1/2 C butter shopping list
- 1/2 C olive oil shopping list
- 1/2 C parmesan cheese grated shopping list
- 1/2 C vodka shopping list
- Hot dried red peppers crushed (small dried) 6-8 to taste shopping list
- 1-2 cloves crushed garlic (1 tsp.) shopping list
- 7 oz Panna cream (or 1/2 pt. heavy whipping cream with a tablespoon of corn starch) shopping list
- 1 lb penne pasta l'dente' shopping list
- Grated romano cheese to garnish shopping list
How to make it
- Prep:
- Cube 6-8 ripe Roma tomatoes set aside
- crush the dried red peppers
- start pasta water in a 6 qt pan
- Put olive oil in 10 in skillet or 4 qt sauce pan melt butter in oil over medium heat
- add & saute' garlic and crushed peppers to blend flavor
- add tomatoes and cook (stirring occasionally) until tomatoes have broken down and creates a paste
- add vodka and Parmesan cheese and continue cooking for 10 minutes over medium heat stirring frequently
- Lower heat and add cream stir to blend and thicken if using whipping cream
- Add to cooked pasta, blend and serve garnished with Romano cheese
- Starting pasta in boiling water when Vodka is added finishes everything at about the same time.
