Ingredients

1 Cup or 125g self raising flour

1 cup or 125g flour

2 tsp ground cinnamon

1/2 tsp ground cloves

1/2 tsp nutmeg

1 tsp ground ginger

1 tsp baking soda

1 cup or 250ml oil

1 cup lightly packed soft browm sugar

4 eggs

1/2 cup golden syrup

2 1/2 cups grated carrot

1/2 cup chopped walnuts

ICING

175g softened cream cheese

60g softened butter

1 1/2 cups icing sugar

1 tsp vanilla essence

1-2 tsp lemon juice

Directions

Preheat oven to 160*c (315*f or gas 2-3)

Line the base of pa n with baking paper

sift together the flours,spices and soda into a large bowl and make a well in the centre

Whisk together the oil,sugar,egtgs and syrup in a jug until they are well combined

gradually stir the mixture into the dry ingredients and stir until it is all smooth

stir in the grated carrot and chopped nuts

Spoon the mix into the prepared pan and smooth the surface. Bale for 1 hour and 30 mins or until skewer comes out clean

Leave the cake in tin for at least 20 mins before turning onto a wire rack to cool

To make the icing: Beat the softened cream cheese and butter with an electric beater until smooth

gradually add the icing sugar alternately with the vanilla and juice,beating until light and creamy.

Spread the icing over cooled cake and enjoy!!!
