Gourmet Carrot Cake

- 1 Cup or 125g self raising flour shopping list
- 1 cup or 125g flour shopping list
- 2 tsp ground cinnamon shopping list
- 1/2 tsp ground cloves shopping list
- 1/2 tsp nutmeg shopping list
- 1 tsp ground ginger shopping list
- 1 tsp baking soda shopping list
- 1 cup or 250ml oil shopping list
- 1 cup lightly packed soft browm sugar shopping list
- 4 eggs shopping list
- 1/2 cup golden syrup shopping list
- 2 1/2 cups grated carrot shopping list
- 1/2 cup chopped walnuts shopping list
- icing shopping list
- 175g softened cream cheese shopping list
- 60g softened butter shopping list
- 1 1/2 cups icing sugar shopping list
- 1 tsp vanilla essence shopping list
- 1-2 tsp lemon juice shopping list
How to make it
- Preheat oven to 160*c (315*f or gas 2-3)
- Line the base of pa n with baking paper
- sift together the flours,spices and soda into a large bowl and make a well in the centre
- Whisk together the oil,sugar,egtgs and syrup in a jug until they are well combined
- gradually stir the mixture into the dry ingredients and stir until it is all smooth
- stir in the grated carrot and chopped nuts
- Spoon the mix into the prepared pan and smooth the surface. Bale for 1 hour and 30 mins or until skewer comes out clean
- Leave the cake in tin for at least 20 mins before turning onto a wire rack to cool
- To make the icing: Beat the softened cream cheese and butter with an electric beater until smooth
- gradually add the icing sugar alternately with the vanilla and juice,beating until light and creamy.
- Spread the icing over cooled cake and enjoy!!!
