How to make it

  • Preheat oven to 160*c (315*f or gas 2-3)
  • Line the base of pa n with baking paper
  • sift together the flours,spices and soda into a large bowl and make a well in the centre
  • Whisk together the oil,sugar,egtgs and syrup in a jug until they are well combined
  • gradually stir the mixture into the dry ingredients and stir until it is all smooth
  • stir in the grated carrot and chopped nuts
  • Spoon the mix into the prepared pan and smooth the surface. Bale for 1 hour and 30 mins or until skewer comes out clean
  • Leave the cake in tin for at least 20 mins before turning onto a wire rack to cool
  • To make the icing: Beat the softened cream cheese and butter with an electric beater until smooth
  • gradually add the icing sugar alternately with the vanilla and juice,beating until light and creamy.
  • Spread the icing over cooled cake and enjoy!!!
