Baked Spinach Stuffed Tomatoes Recipe

Made this to go with a meal when I had plenty of tomatoes to use!

Ingredients
- 4 Large, or 6 Medium tomatoes
- Salt
- 10 oz spinach
- Dash red pepper flakes
- 1 t chopped garlic
- 1/4 white onion, minced
- 1 can cream of mushroom & roated garlic soup
- 1 - 2 c shredded cheese
- 8 oz sour cream
- 1/4 c shredded cheese
- Parmesan
Directions
- Slice tops off of tomatoes and scoop out insides
- Salt shells lightly, and turn upside down on paper towel
- Saute spinach in skillet, drain
- Return to skillet
- Add other ingredients
- Cook until well mixed and heated through
- Spoon mixture into tomato shells
- Top with remaining shredded cheese and sprinkle with parmesan
- Bake at 350 about 30 minutes, until bubbly
