Ingredients

How to make it

  • Slice tops off of tomatoes and scoop out insides
  • Salt shells lightly, and turn upside down on paper towel
  • Saute spinach in skillet, drain if needed (I use bagged frozen spinach instead of the box. Much less water, the liquid usually cooks off)
  • Return to skillet
  • Add other ingredients
  • Cook until well mixed and heated through
  • Spoon mixture into tomato shells
  • Top with remaining shredded cheese and sprinkle with parmesan
  • Bake at 350 about 30 minutes, until bubbly
