Baked Spinach Stuffed Tomatoes

- 4 Large, or 6 Medium tomatoes shopping list
- salt shopping list
- 10 oz spinach shopping list
- Dash red pepper flakes shopping list
- 1 t chopped garlic shopping list
- 1/4 white onion, minced shopping list
- 1 can cream of mushroom & roated garlic soup shopping list
- 1 - 2 c shredded cheese shopping list
- 4 oz sour cream shopping list
- 4 oz cream cheese shopping list
- 1/4 c shredded cheese shopping list
- Parmesan shopping list
How to make it
- Slice tops off of tomatoes and scoop out insides
- Salt shells lightly, and turn upside down on paper towel
- Saute spinach in skillet, drain if needed (I use bagged frozen spinach instead of the box. Much less water, the liquid usually cooks off)
- Return to skillet
- Add other ingredients
- Cook until well mixed and heated through
- Spoon mixture into tomato shells
- Top with remaining shredded cheese and sprinkle with parmesan
- Bake at 350 about 30 minutes, until bubbly
