Nice chicken and rice casserole

Ingredients
  • 3 lbs. chicken
  • 1/3c seasoned flour
  • 1/4c butter
  • 1 can cream of chicken soup
  • 21/2T grated onion
  • 1t. salt
  • dash of pepper
  • 1T chopped parsley
  • 1/2t. celery flakes
  • 1/8t. thyme
  • 11/3c water
  • 11/3c minute rice

Directions
  1. Roll chicken in seasoned flour,brown in butter. Remove chicken. Stir soup,seasonings and water into drippings. Cook and stir till it boils.
  2. Spread minute rice right from box into 11/qt. shallow casserole Pour all but 1/3c. of soup mixture over rice,stir to moisten. Top with chixcken and the rest of the soup mixture.
  3. Bake,covered at 375 for 30 mins. or till tender

Have to try. love using soup to finish off pork medalions,frog legs and pork steaks.makes a quick gravy/sauce and adds to the texture.I call it SMOTHERED,what ever I'm making.Good post...chow
