Amish Pocket Blueberry Cake Recipe
This cake can be adapted to any fruit. I have made with 1 1/2 cup peaches instead of blueberries.

Ingredients
  • 1 cup flour
  • 2/3 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp soda
  • 1/2 cup sour cream
  • 1 tsp vanilla
  • 1 egg
  • 1 1/2 cup fresh blueberries (if using frozen thaw and drain)
  • Streusel topping
  • 1/2 cups chopped nuts
  • 1/2 cup coconut
  • 1/3 cup brown sugar
  • 2 Tbsp margarine

Directions
  1. Blend all ingredients for cake except for blueberries. Beat 1 minute. Pour into greased (on the bottom only) 8 inch square pan.
  2. Arrange blueberries over batter.
  3. Combine topping ingredients until crumbly, sprinkle over blueberries.
  4. Bake at 375 for 35-40 minutes.
  5. Serve warm with whipped topping or vanilla ice cream

This sounds really good. Is it blueberry season? I posted a blueberry recipe today. Our hands are going to be all stained.


It isn't blueberry season here. But I have some frozen.
