How to make it

  • In a medium saucepan, combine the vinegar, sugar, ginger, salt, black pepper and mustard seeds.
  • Bring to a boil over medium heat.
  • Stir in the dried plums, bell peppers and onion.
  • Return to a boil, reduce to a simmer, cover and cook for 10 minutes.
  • Uncover and cook until the prunes are tender and the liquid is reduced to a thick syrup, about 5 minutes.
  • Serve warm, at room temperature or chilled.
  • This makes 3-1/2 cups.
