Festive Holiday Plum Sauce

- 2/3 cup red wine vinegar shopping list
- 1/3 cup sugar shopping list
- 3/4 teaspoon ground ginger shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon black pepper shopping list
- 1/2 teaspoon mustard seeds shopping list
- 12 ounces pitted dried plums (prunes) shopping list
- 1 red bell pepper, cut into slivers shopping list
- 1 yellow bell pepper, cut into slivers shopping list
- 1 small red onion, cut into slivers shopping list
How to make it
- In a medium saucepan, combine the vinegar, sugar, ginger, salt, black pepper and mustard seeds.
- Bring to a boil over medium heat.
- Stir in the dried plums, bell peppers and onion.
- Return to a boil, reduce to a simmer, cover and cook for 10 minutes.
- Uncover and cook until the prunes are tender and the liquid is reduced to a thick syrup, about 5 minutes.
- Serve warm, at room temperature or chilled.
- This makes 3-1/2 cups.
