How to make it

  • Bake sweet potatoes in an oven set at 350 degrees F for 1 hour.
  • Take potatoes out of the oven and place on a plate. Using fingers or two forks, remove the peel. Place potaoes in a bowl.
  • Mash potatoes with a fork until smooth but may still have lumps. Add ginger, milk, and salt to the potatoes and mix. Best served warm.
  • This can easily be made ahead of time and stored in the refrigerator and heated in the microwave.

    Simple, tasty, and - to echo a previous comment - not same old. I halved the recipe. Instead of removing the peel, I mushed up the potatoes in their skins, adding the coconut milk mixture - worked out great. Had with a salad and a vegan version of bacon cheeseburger.

    Oh, thank goodness for something else to do with a sweet potato. I'm getting tired of the plain old baked with cinnamon butter. This will be on our plates with a grilled pork tenderloin. I can't wait to give this one a go. YUM, is right!
