Gingered Sweet Potatoes Recipe
Spice up sweet potatoes with a little zip. This a great substitute for mashed potatoes.

Ingredients
  • 4 sweet potatoes, medium size
  • 3/4 c. coconut milk
  • 1-2 tabls. ginger, peeled and grated
  • 1/2 tsp. salt

Directions
  1. Bake sweet potatoes in an oven set at 350 degrees F for 1 hour.
  2. Take potatoes out of the oven and place on a plate. Using fingers or two forks, remove the peel. Place potaoes in a bowl.
  3. Mash potatoes with a fork until smooth but may still have lumps. Add ginger, milk, and salt to the potatoes and mix. Best served warm.
  4. This can easily be made ahead of time and stored in the refrigerator and heated in the microwave.

Oh, yum!!!


Oh, thank goodness for something else to do with a sweet potato. I'm getting tired of the plain old baked with cinnamon butter. This will be on our plates with a grilled pork tenderloin. I can't wait to give this one a go. YUM, is right!


Simple, tasty, and - to echo a previous comment - not same old. I halved the recipe. Instead of removing the peel, I mushed up the potatoes in their skins, adding the coconut milk mixture - worked out great. Had with a salad and a vegan version of bacon cheeseburger.
