Ingredients
  • 1 cup shortening
  • 2 cups sugar
  • 5 cups flour
  • 1 tbsp vanilla
  • 2 whole eggs and 2 egg yolks
  • 1/2 cup hot water
  • 1 tsp baking powder
  • 2 tsp baking soda
  • .
  • filling:
  • 2 egg whites
  • 2 Tbsp milk
  • 2 tsp vanilla
  • 1 1/2 cup shortening
  • 4 Tbsp flour
  • 1 pound powdered sugar

Directions
  1. Cream shortening, sugar, salt, eggs and vanilla. Mix flour, baking powder and add soda with water and milk. Mix together.
  2. bake 425 degrees 5-8 minutes.
  3. .
  4. To make filling: beat egg whites until stiff. Add vanilla, flour and milk. Beat well and add shortening and sugar.
  5. Place cream filling between two cookies.
  6. Enjoy!!!

These are delicious! I had to make some vanilla ones for my daughter's class party, in case someone was allergic to or didn't like (heaven forbid!) the chocolate version. They are terrific! Thanks for posting this recipe - you rock!

Hi. I am anxious to try this recipe -- all of the other vanilla whoopies I have tried just flatten out like a cookie. It says to add the soda to the water and milk, but milk is not listed on the batter recipe list (only on the filling). How much needed? Thanks!
