How to make it

  • Sift flour and measure and sift again with baking powder, salt and spices.
  • Cream shortening and sugar adding eggs one at a time beating well after each addition.
  • Add pumpkin and flavorings beating well.
  • Add nutmeats and dates.
  • Slowly add flour mixing well after each addition.
  • Drop by teaspoon onto well greased baking sheet.
  • Bake in moderate oven until lightly browned.

    Just made these, last batch is in the oven right now. These are AMAZING! whatever you do, do not omit the lemon extract, it takes the cookies to a whole new level of deliciousness. Will be freezing pumpkin puree so that I can make these all year round.
