I obtained this recipe from an estate sale a few years ago and now make it often. I love the blending of pineapple and cheese. These are really good served warm with pineapple cream cheese on top. Yummers.

Ingredients
  • 8-1/4 ounce can crushed pineapple undrained
  • 2 cups baking mix
  • 1 tablespoon sugar
  • 1/2 cup milk
  • 1 egg
  • 1/2 cup shredded mild cheddar cheese

Directions
  1. Preheat oven to 400.
  2. Line 12 medium muffin cups with paper baking cups.
  3. Mix pineapple with remaining ingredients then beat vigorously for 30 seconds.
  4. Fill muffin cups 2/3 ful.
  5. Bake for 15 minutes.
