Beets are not a popular vegetable but, when I was introduced to this dish I was hooked. You can adapt canned juliened or sliced beets if you are in a hurry,

Harvard beets are a common family dish in my part of the country--with an interesting twist. Hard boil about a half-dozen eggs. Peel them after they cool. then add the peeled eggs to the beet mixture in a non-reactive container that allows the beet liquid to completely cover the eggs (I use a glass quart jar). Allow to marinate in the refrigerator for a few days. The eggs turn pink and yummy, and make dynamite deviled eggs.

I oven roast my beets and they taste so sweet! A little olive oil is all it take 350 till tender.I have looked for harvard beet recipe.It is a recipe that I had as a kid and am so very excited to make these myself.Thank you so much!!!
