How to make it

  • Bake potatoes at 400 degrees for 1 hour or until tender
  • Meanwhile, in a medium saucepan, brown ground beef, onion and garlic.
  • Drain fat, add beans, salsa and pepper
  • Simmer, stirring occasionally, 40 minutes or until thickened
  • To serve, cut an X in the top of each potatoe, fluff potato pulp with a fork and then spoon beef mixture over each potatoe.
  • Garnish with sour cream and sprinkle with green onion and tomato
  • Serve with corn or tortilla chips
