Mexican Baked Potatoes Recipe
Mexican baked potatoes, the name says it all. I had this many years ago and really enjoyed it. I'm very happy I found the recipe again!

Ingredients
  • 6 large baking potatoes
  • 1/2 lb lean ground beef
  • 1 medium onion finely chopped
  • 1 garlic clove, minced
  • 1 16-oz can refried beans
  • 1 8-oz jar salsa
  • pepper to taste
  • 1 cup sour cream
  • 2 tablespoons finely chopped green onions
  • 2 tablespoons finely chopped tomato
  • corn or tortilla chips for garnish

Directions
  1. Bake potatoes at 400 degrees for 1 hour or until tender
  2. Meanwhile, in a medium saucepan, brown ground beef, onion and garlic.
  3. Drain fat, add beans, salsa and pepper
  4. Simmer, stirring occasionally, 40 minutes or until thickened
  5. To serve, cut an X in the top of each potatoe, fluff potato pulp with a fork and then spoon beef mixture over each potatoe.
  6. Garnish with sour cream and sprinkle with green onion and tomato
  7. Serve with corn or tortilla chips
