Mexican Baked Potatoes

- 6 large baking potatoes shopping list
- 1/2 lb lean ground beef shopping list
- 1 medium onion finely chopped shopping list
- 1 garlic clove, minced shopping list
- 1 16-oz can refried beans shopping list
- 1 8-oz jar salsa shopping list
- pepper to taste shopping list
- 1 cup sour cream shopping list
- 2 tablespoons finely chopped green onions shopping list
- 2 tablespoons finely chopped tomato shopping list
- corn or tortilla chips for garnish shopping list
How to make it
- Bake potatoes at 400 degrees for 1 hour or until tender
- Meanwhile, in a medium saucepan, brown ground beef, onion and garlic.
- Drain fat, add beans, salsa and pepper
- Simmer, stirring occasionally, 40 minutes or until thickened
- To serve, cut an X in the top of each potatoe, fluff potato pulp with a fork and then spoon beef mixture over each potatoe.
- Garnish with sour cream and sprinkle with green onion and tomato
- Serve with corn or tortilla chips
