Starbucks Cranberry Bliss Bars Recipe
This copycat version is closest to the one we get here on the Canadian West coast - FAIR WARNING, these are highly addictive!

  • Cake:
  • 1 cup butter, softened
  • 1 1/4 cups light brown sugar, packed
  • 3 eggs
  • 1 1/2 tsp vanilla
  • 1/3 cup finely minced crystallized ginger -OR- 1 tsp ground ginger
  • 1/4 tsp salt
  • 1 1/4 cups all purpose flour
  • OPTIONAL: 1/2 cup diced dried cranberries
  • 6 oz white chocolate, cut into small chunks
  • Frosting:
  • 4 oz cream cheese, softened
  • 3 cups powdered sugar
  • 4 tsp lemon juice
  • Sprinkle and Drizzle:
  • 1/2 cup diced dried cranberries
  • 4 oz white chocolate, melted

Directions
  1. Cake:
  2. Preheat oven to 350F and grease well a small cookie sheet, 10x15". Alternatively, you can prepare in a greased 9x13 pan but the bars will be higher.
  3. Using an electric mixer, beat butter and brown sugar together until smooth. Add eggs, vanilla, ginger and salt beat well to combine. Gradually mix in flour until smooth. Mix the *optional* 1/2 cup cranberries and white chocolate chunks into batter by hand.
  4. Pour batter into prepared pan and smooth out using a spatula.
  5. Bake for 30 to 40 minutes (depending on pan used) or until lightly browned around the edges. Let cool in pan on a wire rack.
  6. Frosting:
  7. Combine frosting ingredients with an electric mixer, beating until smooth. Frost cake when completely cooled.
  8. Sprinkle cake with cranberries and drizzle with white chocolate.
  9. Allow the cake to sit for a couple of hours to allow toppings to set, then slice lengthwise in half. Slice crosswise three times, making 8 rectangles. Slice each rectangle in half diagonally.
  10. Makes 16 bars.
