Tempura Vegetables Recipe

Ingredients
  • 3/4 cup cornstarch
  • 1/2 cup self rising flour
  • 1/4 tsp. pepper
  • 1/2 cup water
  • 1 large egg, beaten
  • 2 med. zucchini
  • 1 med. onion
  • 2 yellow squash
  • veg. oil
  • 1/2 tsp. salt

Directions
  1. Mix 1st 3 ingredients in a large bowl.
  2. Add water and egg and mix until smooth.
  3. Cut veggies into 1/4 inch pieces.
  4. Pour oil into heavy pan and heat to 375 or put the end of a wooden spoon in the oil and if the oil bubbles up around it, the oil is ready.
  5. Dip veggies into batter.
  6. Fry in batches about 4 minutes or until golden brown.
  7. Drain on paper towels.
  8. Sprinkle with salt.

I think if you put batter on anything and fried it you could get my kids to eat it. Sounds wonderful!


I personally LOVE just about anything in a tempura batter and deep fried. This is the way I prepare my tempura batter and sometimes I even add a splash of beer ;-) In the batter that is lol


Love tempura, and especially when the vegetable is a sweet potato...have you tried that?
