Ingredients
  • 2 cups sifted super fine sugar, divided
  • 2.1 1/3 cups sifted cake flour
  • 1 1/2 cups eggwhites, at room temperature (10 eggs)
  • 3/4 tsp salt
  • 1 1/2 tsp cream of tartar
  • 3/4 tsp vanilla extract
  • 1 1/2 tspgrated lemon zest(2 lemons)

Directions
  1. Preheat oven to 350 degrees F
  2. Combine 1/2 cup flour with the sugar and sift together 4 times.Set aside
  3. Place the eggwhites,salt,and cream of tartar ina the bowl of an electric mixer fitted with the whisk attachment and beat on high speed until the eggs make medium-firm peaks,about 1 minute.With the mixer on medium speed,add the remaining 1 1/2 cups sugar by sprinkling it over the beateb eggwhites.Whisk for a few minutes untilthick and shinny.Whisk in the vanilla and lemon zest and continue to whisk till very thick,about 1 more minute.Sift about 1/4 of the flour mixture over the eggwhites and fold it into the batter with a rubber spatula.Continue adding the flour by fourths by sifting and folding until it is all incorporated.
  4. Pour the batter into an ungreased 10- inch tube pan,smooth the top and bake it for 35-40 minutes,until it springs back to the touch.Remove the cake from the oven and invert the pan on a cooling rack until cool.

Alterations


Hello all,by tha way i've done 2 more cake recipes with this angel food cake so the egg yolks wont go to waste. i top the cake with custard and bake it in a rectangle pan.I melted 1/4 cup of sugar over low heat directly on the pan i use,swirl it around to cover the bottom and let cool.Whip the remaining eggyolks with 1 can of condensed milk and 3/4 cups of water and 1 tsp lemon rind mix well and strain into pan with caramelized sugar.pour angel food cake batter on top and bake in a larger pan with water (banne marie)bake for 40 minutes til cake is done...DELICIOUS...I made pineapple upside down cake with the same angel food recipe too.


Hello again, this Angel Food cake is so easy to make but i suggest never to alter anything from the recipe, specially the sugar or the cake won't rise, tried to cut down on the sugar and ended up wth a very heavy and dense cake.
