Southwest Chicken And Rice Recipe
Nice, easy lazy Saturday meal - throw it in the crock pot, watch a movie, have a glass of wine and voila! Dinner's ready.

Ingredients
  • 4 boneless, skinless chicken breast halves
  • 15 oz can black beans, drained
  • 12 oz jar roasted red bell peppers, undrained
  • 14-1/2 oz can Mexican style stewed tomatoes, undrained
  • 1 lg. onion, chopped
  • 1/2 tsp salt
  • pepper to taste
  • hot, cooked rice

Directions
  1. Place chicken in crock pot.
  2. Combine beans, red peppers, tomatoes, onion, salt and peppr. Pour over chicken.
  3. Cover and cook on High 2 to 3 hours or until chicken is no longer pink.
  4. Serve over rice.
