This is one of my favorite spring dishes. It's a variation of a recipe I attribute to Terese Allen, one of the nicest cookbook writers I've ever met. Easily made vegetarian.

Ingredients
  • 4 Tbsp balsamic or red wine vinegar
  • 2 garlic cloves, slightly crushed
  • 2 Tbsp chopped fresh thyme
  • Freshly ground black pepper
  • 1 tsp salt
  • 1 1/2 cups jasmine or basmati rice, cooked
  • 1/2 cup asparagus, tough ends removed, chopped, blanched
  • 1 smoked pork chop
  • 1/3 cup chopped green onions

Directions
  1. Combine the vinegar, garlic, thyme, pepper, and salt. Let stand 1-2 hours or more. Remove garlic.
  2. Pan fry the pork chop so that it develops a little carmelization/becomes a little brown. Cut into small pieces when it's cool enough to handle.
  3. Toss the rice, asparagus, pork chop and onions with the dressing. Season to taste with additional black pepper as desired.
  4. Serve at room temperature.

I made this recipe tonight (add uploaded the photo). This salad is *delicious* -- I enjoyed the combination of garlic infused balsamic with the sweet asparagus and smokey pork (I substituted a thick cut bacon). Yum yum yum -- will make this again!


Yum! I used arborio rice and bacon, but it's a great seasonal recipe.


I never heard of a 'smoked' pork chop...?

I guess I'm lucky...the 3 grocery stores I go to most often carry smoked pork chops (not all are created equal, but I like that there are options) and we have at least one vendor at our farmers' market who makes them. I'm not sure if recommending specific products is allowed on this site...I'll edit if it's not...my favorite for this dish is made by Stoddard's Country Grove Market, but I'm not sure if they sell mail order. My second favorite (again for this dish) is made by Nueske's Applewood Smoked Meats and they do sell mail order. Both have web sites.

As seen in other comments, a perfectly acceptable, and yummy (I'll have to try it), substitution is bacon. Or a really good slice of ham.

I made this last night---added blue cheese and used sherry vinegar...

had lots of leftovers so when my parents decided to come by today i fed it to them for lunch...
they gobbled it all up while mumbling about how good it was and what a creative recipe...

i's say it was a big hit!...

Alterations


I've been making this dish for 3 years I think and have never thought to vary the ingredients as the ones listed work really well together. Then I introduced it to you. :) And some of you suggested bacon. Who am I not to try bacon (yum). This weekend's version contains 1/2 tsp of homegrown, frozen rosemary, finely chopped. It didn't overpower the thyme and was a really nice herbal addition.
