Chicken And Artichokes Recipe
This dish is delicious and looks great. The flavors belnd together so nicely and can be served with rice and a salad or a green vegetable

Ingredients
  • 6 chicken breasts cut into small pieces
  • 1 egg beaten
  • 1/2 cup milk
  • 18oz mushrooms sliced
  • dry breadcrumbs
  • butter
  • 2 cans artichoke hearts drained and sliced
  • 12 oz munster cheese
  • 1/2 c chicken broth
  • 1/2 cup white wine

Directions
  1. Soak the chicken in the egg and the milk for 1/2 hour
  2. Saute the mushrooms in butter set aside
  3. Roll the chicken pieces in the breadcrumbs and brown in buttter
  4. Put all of the above ingredients and the artichoke hearts in a large cassarole dish
  5. Cover with the munster cheese cut into small cubes
  6. Pour over the broth and the wine
  7. Bake at 350 for 30 minutes

I am going to make this tomorrow night - I had intended to make parmesan chicken with a couscous/artichoke salad but I'm going to try this instead. Thanks for posting - your daughter sounds like a wonderful kitchen helper. I'm jealous!
