How to make it

  • Rinse catfish and pat dry (strips should be just moist enough for coating to stick. Combine cornmeal, jalapenos, garlic and salt in a large zip lock bag. Add catfish strips and shake until all are coated.
  • Heat about 1 to 1-½ inches of oil in a large skillet over medium high heat. Place coated catfish in hot oil, turn when brown. Continue to fry until both sides are brown and the fish begins to flake when pierced with a fork.
  • Remove and drain on paper towels to remove excess oil.
  • Serve with salsa and lime wedges.

    Will have to try this,everything is in my taste zone.Down here catfish is the only fish that you can get all the time.Thanks for sharing...Bob
