How to make it

  • Heat the vegetable stock in a saucepan until boiling. Add quinoa and reduce heat to simmer.
  • Simmer for about 15-20 minutes, or until quinoa is light and fluffy.
  • While quinoa is cooking, drain the tofu on paper towels ( 15-20 minutes), cut into cubes.
  • In a medium-size skillet, heat oil and saute' the onion and pepper for about 5 minutes.
  • Add cubed tofu and the garlic, and continue to saute' for another 3-4 minutes.
  • Add the cooked quinoa, pepper, and onion.
  • Toss until blended.
