Quinoa and Tofu

                    - 1 cup vegetable stock shopping list
 - 1 cup quinoa shopping list
 - 8 ounces extra-firm tofu shopping list
 - 2 teaspoons apricot oil ( or olive oil ) shopping list
 - 1 small red onion, diced fine shopping list
 - 1 medium-size red pepper, sliced shopping list
 - 1 tablespoon chopped garlic shopping list
 
How to make it 
                    - Heat the vegetable stock in a saucepan until boiling. Add quinoa and reduce heat to simmer.
 - Simmer for about 15-20 minutes, or until quinoa is light and fluffy.
 - While quinoa is cooking, drain the tofu on paper towels ( 15-20 minutes), cut into cubes.
 - In a medium-size skillet, heat oil and saute' the onion and pepper for about 5 minutes.
 - Add cubed tofu and the garlic, and continue to saute' for another 3-4 minutes.
 - Add the cooked quinoa, pepper, and onion.
 - Toss until blended.
