Quinoa And Tofu Recipe

Ingredients
  • 1 cup vegetable stock
  • 1 cup quinoa
  • 8 ounces extra-firm tofu
  • 2 teaspoons apricot oil ( or olive oil )
  • 1 small red onion, diced fine
  • 1 medium-size red pepper, sliced
  • 1 tablespoon chopped garlic

Directions
  1. Heat the vegetable stock in a saucepan until boiling. Add quinoa and reduce heat to simmer.
  2. Simmer for about 15-20 minutes, or until quinoa is light and fluffy.
  3. While quinoa is cooking, drain the tofu on paper towels ( 15-20 minutes), cut into cubes.
  4. In a medium-size skillet, heat oil and saute' the onion and pepper for about 5 minutes.
  5. Add cubed tofu and the garlic, and continue to saute' for another 3-4 minutes.
  6. Add the cooked quinoa, pepper, and onion.
  7. Toss until blended.
