Ingredients
  • 1/2 pound extra-firm tofu, drained
  • 1 tablespoon lemon juice
  • 1 teaspoon cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon dijon mustard
  • 1/4 cup olive oil
  • 1 tablespoon agave nectar

Directions
  1. Slice the tofu into 1 inch slices and drain on a paper towel for about 20 minutes, pressing out the moisture halfway through the draining process.
  2. Press again at the end of the 20 minutes.
  3. Place a few of the tofu slices in a blender with the lemon juice, cider vinegar, salt, and mustard.
  4. Mix until smooth, then add the rest of the tofu and oil, adding the oil slowly.
  5. Mix until well blended and then add the agave nectar and blend until smooth.
  6. There you go, your done.
