Tofu Mayonnaise

- 1/2 pound extra-firm tofu, drained shopping list
- 1 tablespoon lemon juice shopping list
- 1 teaspoon cider vinegar shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon Dijon mustard shopping list
- 1/4 cup olive oil shopping list
- 1 tablespoon agave nectar shopping list
How to make it
- Slice the tofu into 1 inch slices and drain on a paper towel for about 20 minutes, pressing out the moisture halfway through the draining process.
- Press again at the end of the 20 minutes.
- Place a few of the tofu slices in a blender with the lemon juice, cider vinegar, salt, and mustard.
- Mix until smooth, then add the rest of the tofu and oil, adding the oil slowly.
- Mix until well blended and then add the agave nectar and blend until smooth.
- There you go, your done.
