Ingredients
  • 4 slices bacon, cut into strips
  • 4 boneless chicken breast halves,pounded to 1/4" thick
  • ¼ tsp salt
  • dash of pepper
  • 1 8 oz pkg sliced fresh mushrooms
  • ¼ C chopped onion
  • 2 Tbl brandy or chicken broth
  • 1 (8 OZ) container of sour cream
  • chopped chives

Directions
  1. Cook bacon drain and set aside, then crumble when cool
  2. Remove all but 2 Tbl drippings from pan; add chicken, sprinkle with salt and pepper
  3. Cook 4 to 6 minutes or until browned, turning once
  4. Add mushrooms and onions cook and stir 3 to 4 minutes Reduce heat to low, add brandy.
  5. Cover; simmer 10 to 15 minutes or until tender
  6. Remove chicken from skillet to platter; keep warm
  7. Add sour cream to same skillet; cook over low heat until thouroughly heated; spoon over chicken
  8. Sprinkle with bacon and chives
  9. FYI: Pound chicken flat before freezing and it thaws qucikly and is ready to use
