How to make it

  • Cook bacon drain and set aside, then crumble when cool
  • Remove all but 2 Tbl drippings from pan; add chicken, sprinkle with salt and pepper
  • Cook 4 to 6 minutes or until browned, turning once
  • Add mushrooms and onions cook and stir 3 to 4 minutes Reduce heat to low, add brandy.
  • Cover; simmer 10 to 15 minutes or until tender
  • Remove chicken from skillet to platter; keep warm
  • Add sour cream to same skillet; cook over low heat until thouroughly heated; spoon over chicken
  • Sprinkle with bacon and chives
  • FYI: Pound chicken flat before freezing and it thaws qucikly and is ready to use
