Chicken with Mushrooms and Bacon

- 4 slices bacon, cut into strips shopping list
- 4 boneless chicken breast halves,pounded to 1/4" thick shopping list
- ¼ tsp salt shopping list
- dash of pepper shopping list
- 1 8 oz pkg sliced fresh mushrooms shopping list
- ¼ C chopped onion shopping list
- 2 Tbl brandy or chicken broth shopping list
- 1 (8 OZ) container of sour cream shopping list
- chopped chives shopping list
How to make it
- Cook bacon drain and set aside, then crumble when cool
- Remove all but 2 Tbl drippings from pan; add chicken, sprinkle with salt and pepper
- Cook 4 to 6 minutes or until browned, turning once
- Add mushrooms and onions cook and stir 3 to 4 minutes Reduce heat to low, add brandy.
- Cover; simmer 10 to 15 minutes or until tender
- Remove chicken from skillet to platter; keep warm
- Add sour cream to same skillet; cook over low heat until thouroughly heated; spoon over chicken
- Sprinkle with bacon and chives
- FYI: Pound chicken flat before freezing and it thaws qucikly and is ready to use
