How to make it

  • Heat a small frying pan. Add the oil. Heat until warm, then add the cold leftover rice and stir-fry until fragrant and hot.
  • Add sauerkraut in about the same proportion as the rice. Stir into the rice and cook until hot.
  • Add the hot pepper flakes - I sprinkled them over the top until they looked right - and stir into the rice and sauerkraut mixture. Mix.
  • Make a well in the middle of the pan, and crack the egg in. Cook until the white is done on the bottom. With a spatula, flip the egg (and some but not all of the rice mixture) and cook the other side of the egg. I was after "over easy".
  • When the egg is done to your liking, slide the whole thing out onto a plate and eat.

    The title is correct; it’s NOT… Kim chi. I think it would have been better over a bed of rice instead of the rice mixed in. I did garnish with ginger as it is usually an ingredient in kimchee otherwise I made recipe as listed.
    This was an inventive recipe but it’s just not for me.
