Copied this recipe from a Pillsbury Holiday cook booklet years ago. Have been making them ever since. They are very good and you don't have to cook the potatoes.

Ingredients
  • 4 1/2 to 5 1/2 C. Bread Flour
  • 1 C. mashed potato flakes
  • 3 T. sugar
  • 2 tsp. salt
  • 2 pkgs. dry yeast
  • 2 C. milk
  • 1/2 C. butter
  • 2 eggs

Directions
  1. Grease one 13 x 9 pan or two 9-inch round cake pans.
  2. Lightly spoon flour ino measuring cup, level off.
  3. In large bowl, combine 1 1/2 C. flour, potato flakes, sugar, salt and yeast, blend well
  4. In medium saucepan, heat milk and butter until very warm (120 to 130 deg. F)
  5. Add warm liquid and eggs to flour mixture. Blend at low speed until moistened, then beat 3 mins. at medium speed.
  6. Stir in enough flour to make a soft dough.
  7. On a floured board, knead remaining flour until dough is smooth and elastic (10 min.)
  8. Place in greased bowl, cover loosely with plastic wrap and cloth towel.
  9. Let rise in warm place until light and doubed in size, about 30to 45 mins.
  10. Punch down dough. Let rest on counter covered with inverted bowl for 15 mins.
  11. Divide dough into 24 pieces, shape into balls.
  12. If desired, dip tops of balls in additional potato flakes. Place in prepared pans.
  13. Cover and let rise in warm place until light and doubled in size (about 30 to 45 mins.)
  14. Heat oven to 375 deg. Bake 25 5o 35 mins. until golden brown. Remove from pans immediately and cool on wire racks.
  15. Enjoy!
