How to make it

  • Grease one 13 x 9 pan or two 9-inch round cake pans.
  • Lightly spoon flour ino measuring cup, level off.
  • In large bowl, combine 1 1/2 C. flour, potato flakes, sugar, salt and yeast, blend well
  • In medium saucepan, heat milk and butter until very warm (120 to 130 deg. F)
  • Add warm liquid and eggs to flour mixture. Blend at low speed until moistened, then beat 3 mins. at medium speed.
  • Stir in enough flour to make a soft dough.
  • On a floured board, knead remaining flour until dough is smooth and elastic (10 min.)
  • Place in greased bowl, cover loosely with plastic wrap and cloth towel.
  • Let rise in warm place until light and doubed in size, about 30to 45 mins.
  • Punch down dough. Let rest on counter covered with inverted bowl for 15 mins.
  • Divide dough into 24 pieces, shape into balls.
  • If desired, dip tops of balls in additional potato flakes. Place in prepared pans.
  • Cover and let rise in warm place until light and doubled in size (about 30 to 45 mins.)
  • Heat oven to 375 deg. Bake 25 5o 35 mins. until golden brown. Remove from pans immediately and cool on wire racks.
  • Enjoy!
