Scallop and mushroom pie

- 1 1/2 lbs fresh scallops shopping list
- 1 cup milk shopping list
- salt and fresh ground pepper shopping list
- 1 Tablespoon butter shopping list
- 1 Tablespoon flour shopping list
- 1/2 lb sliced mushrooms sauteed briefly in butter (I like a mix of white, shiitake, and oyster mushrooms) shopping list
- 1/4 cup sherry shopping list
- 3 cups leftover mashed potatoes shopping list
How to make it
- Preheat oven to 350 degrees F.
- Cut the scallops in half if they are large.
- Simmer scallops in milk, salt and pepper for 5 minutes, until barely cooked.
- Strain, reserving milk.
- Melt butter in saucepan.
- Add flour and whisk until smooth.
- Slowly add warm reserved milk, whisking constantly to prevent lumps.
- Add mushrooms, sherry and scallops.
- Put into oven proof baking dish.
- Spread mashed potatoes over top of scallop mixture.
- Dot with additional butter and bake for 20-30 minutes until top begins to brown slightly.
