Ingredients

How to make it

  • Preheat oven to 350 degrees F.
  • Cut the scallops in half if they are large.
  • Simmer scallops in milk, salt and pepper for 5 minutes, until barely cooked.
  • Strain, reserving milk.
  • Melt butter in saucepan.
  • Add flour and whisk until smooth.
  • Slowly add warm reserved milk, whisking constantly to prevent lumps.
  • Add mushrooms, sherry and scallops.
  • Put into oven proof baking dish.
  • Spread mashed potatoes over top of scallop mixture.
  • Dot with additional butter and bake for 20-30 minutes until top begins to brown slightly.

    Thas OK. I like sherry. But Jeff Smith, well, some things I don't like. Still, that doesn't mean the man couldn't cook.

    If one doesn't want to use sherry, I think some clam juice, fish stock, or even chicken stock would be fine!
