Ingredients
  • 1 1/2 lbs fresh scallops
  • 1 cup milk
  • salt and fresh ground pepper
  • 1 Tablespoon butter
  • 1 Tablespoon flour
  • 1/2 lb sliced mushrooms sauteed briefly in butter (I like a mix of white, shiitake, and oyster mushrooms)
  • 1/4 cup sherry
  • 3 cups leftover mashed potatoes

Directions
  1. Preheat oven to 350 degrees F.
  2. Cut the scallops in half if they are large.
  3. Simmer scallops in milk, salt and pepper for 5 minutes, until barely cooked.
  4. Strain, reserving milk.
  5. Melt butter in saucepan.
  6. Add flour and whisk until smooth.
  7. Slowly add warm reserved milk, whisking constantly to prevent lumps.
  8. Add mushrooms, sherry and scallops.
  9. Put into oven proof baking dish.
  10. Spread mashed potatoes over top of scallop mixture.
  11. Dot with additional butter and bake for 20-30 minutes until top begins to brown slightly.

Is there something else to add to this instead of the sherry?

If one doesn't want to use sherry, I think some clam juice, fish stock, or even chicken stock would be fine!


Thas OK. I like sherry. But Jeff Smith, well, some things I don't like. Still, that doesn't mean the man couldn't cook.
