How to make it
- Cook the quinoa in 1 1/2 cups water. Bring to a boil then reduce heat and cover. Takes about 10 minutes. It's done when the quinoa is translucent with a white "tail".
- While the quinoa is cooking cube the banana, mango and avocado. Coarsely chop the walnuts and pumpkin seeds.
- When the quinoa is done mix everything together and serve. It's good with the quinoa still hot from cooking or cold the next day!
