How to make it

  • Cook the quinoa in 1 1/2 cups water. Bring to a boil then reduce heat and cover. Takes about 10 minutes. It's done when the quinoa is translucent with a white "tail".
  • While the quinoa is cooking cube the banana, mango and avocado. Coarsely chop the walnuts and pumpkin seeds.
  • When the quinoa is done mix everything together and serve. It's good with the quinoa still hot from cooking or cold the next day!

    nice recipe! if you want to try a raw version, instead of cooking the quinoa you can sprout it (1 night covered with water and then around 2 days on a strainer rinsed morning and night). This way, the quinoa retains all its wonderful nutritional properties and, more important, its enzymes. Enjoy!
