Not Your Moms Potato Salad

- 3 lbs small red potatoes shopping list
- 1 red onion (sliced in half to make circles and half circle pieces shopping list
- 2 cloves pressed garlic shopping list
- 4 hard boiled ,peeled and sliced in an egg slicer with yolk removed and put aside shopping list
- 1 lb bacon, chopped small shopping list
- cilantro shopping list
- lemon shopping list
- salt and pepper shopping list
How to make it
- Boil potatoes skin on in salted water until almost able to pierce with a fork
- remove completely from pot to platter to cool quickly
- In a saucier pan place bacon pieces and cook until just crispy but in no way charred
- add sliced onion and pressed garlic
- cook 1 minute
- remove from pan scraping the yummies from bottom and placing on paper towels on top of newspaper and let drain
- place cooled potatoes on cutting board and thinly slice about 1/8 "
- In a ceramic bowl that has been warmed in the oven
- add sliced potatoes, onion. garlic and bacon and egg whites (save a few for garnish)
- spinkle chopped cilantro in and gently fold
- add 1/4 cup white truffle olive oil or flavorful oil
- add 2 squeezed fresh basil leaves
- squeeze 1/2 lemon thru strainer
- re-season
- with 2 large spoons very gently fold
- garnish with raw thinly sliced circles of onion and some egg whites
- As a final touch crumble the egg yolks in your hands making them very small and spinkle on top.
