How to make it

  • In a small sauce pan, heat milk,butter,sugar,salt,caraway seeds and water
  • when butter is melted and sugar and salt dissolved, set pan aside to cool to 105F.
  • when mixture is at 105F. pour into a heavy-duty mixer and add yeast, stir to disolve thoroughly
  • add 5 cups of flour and mix on low until dough starts to pull away from side of bowl-about 10 minutes
  • using dough hook, knead in remaining cup of flour, until dough is very smoth- about 5 minutes more
  • cover and let rise until doubled-about 1 hour
  • place on a cutting board and punch down
  • for eachpretzel pinch off a golf ball size of dough and roll inti a snake about 10" long and form a pretzel
  • place on a floured tes towl and allow to rise for 15 minutes
  • preheat oven to 400F. while waiting bring 8 quarts of water to boil. place 5 pretzels in boiling water and boil till they float-about 5 minutes. remove with a slotted spoon and place on a greased baking sheet.when all have been boiled place in oven and bake till golden brown-about 20 - 25 minutes
  • can freeze extras and heat in a 350F. or microwave
