Ricotta Cookies Recipe

A very creamy, buttery, soft cookie that is a wonderful complement to even the most simple meal or get together.

Ingredients
- 1/4 pound butter
- 1/4 cup Ricotta cheese
- 1 tsp vanilla flavoring
- 1 cup granulated sugar
- 1 egg
- 2 cups sifted flour
- 1/2 tsp baking soda
- 1/2 tsp salt
Directions
- Allow butter to soften. Preheat oven to 350.
- Blend butter with Ricotta until creamy.
- Add vanilla and mix well.
- Add sugar gradually, beating until well blended.
- Add egg and mix well.
- Slowly stir in dry ingredients, blending well.
- Drop by teaspoon on greased cookie sheet. Bake at 350 for 10 minutes. Yield 30 to 36 cookies depending on size.
