How to make it

  • Allow butter to soften. Preheat oven to 350.
  • Blend butter with Ricotta until creamy.
  • Add vanilla and mix well.
  • Add sugar gradually, beating until well blended.
  • Add egg and mix well.
  • Slowly stir in dry ingredients, blending well.
  • Drop by teaspoon on greased cookie sheet. Bake at 350 for 10 minutes. Yield 30 to 36 cookies depending on size.

    Oops, forgot to say I added a little more ricotta as I love the taste of it and also added more butter too.
