Ingredients
  • 2 cups all-purpose flour
  • 3 teaspoons poppy seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup sugar
  • 1/2 cup butter
  • 2 eggs
  • 1 cup plain yogurt
  • 1 teaspoon pure vanilla extract

Directions
  1. In small bowl, stir together flour, poppy seeds, salt and baking soda.
  2. In large bowl, cream together sugar and butter.
  3. Beat in eggs, one at a time.
  4. Beat in yogurt and vanilla until well blended.
  5. Stir in flour mixture until moistened thoroughly.
  6. Spoon batter into greased muffin tins.
  7. Bake at 400 degrees for 15-20 minutes or until a wooden pick inserted in center comes out clean.
  8. Cool muffins on wire rack for 5 minutes before serving.

These look yummy. I love poppy seeds in baked goods. I wonder if lemon yogurt would do the trick?


Lemon yogurt sounds like a good idea. Years ago I made a poppy seed bread that was from a Polish cookbook which was delicious. I used to be able to get a similar bread in the local grocery store years ago but then it disappeared.


Debra, these sound fabulous! I'm a muffin junkie--I just love them. I'd definitely add some lemon zest in there, and the lemon yogurt sounds like a great idea, too!


Thanks for the recommendations elle. I will try make those changed to the recipe next time I make them. I also love making muffins. As a matter of fact I had just purchased a new muffin cookbook over the weekend and I am dying to try some of the unusual recipes in the book.

These sound yummy! I was wondering if maybe lemon curd might be a better choice? When I make bread pudding I sometimes put lemon curd on the last 20 min. of baking. Just a thought.

For me I think the Lemon Curd would make it too sweet as I personally like the acidness of the fresh Lemon. But, of course, that is just a personal taste. I have always been addicted to the tangyness of citrus fruits.


I think the lemon curd might make it too sweet also. Just a matter of someone doing an experiment to see how they turn out with that addition.


These were wonderful! i added just a touch of lemon zest.. They lasted all of 10 minutes after they came out of the oven! Very nice!


Love poppy seed muffins, really. They´re one of my very favorites and be sure they are even better with LOTS of lemon zest (I use zest and juice from 2 lemons for 1 batch of 12 muffins, maybe too lemony, but I love lemon too). I will try this of yours since I do not use to use butter in mine (you know that fat stuff), but I´m sure butter gives it a very special softness and richness and it´s so nice to sometimes pamper yourself...

So far I've found three of your receipes that I've printed out. You sound like a great cook and I can't wait to try them out on the people at our Church. Too bad my husand doesn't eat home that often & too bad I don't have children as I just love to cook & bake!
