Chocolate Balls Recipe
This is s a perfect finger dessert for those office parties and for that come and go company over the holiday season

Ingredients
  • 1 cup of crunchy peanut butter
  • 4 ounces butter
  • 2 1/4 cups of icing sugar
  • 1 1/2 cups of rice crispy cereal
  • Chocolate Mix:
  • 8 ounces cooking chocolate
  • 1 ounce vegetable shortening

Directions
  1. Melt the peanut butter and butter in a pan and pour over the dry ingredients. Mix well. Roll ingredients into 1 inch balls and refrigerate for 10 minutes. Melt chocolate, mix ingredients gently over double boiler. Roll balls into chocolate mixture and put on wire rack. Refrigerate
  2. For a little change up you can roll them in crushed toasted almonds or coconut immediately after the chocolate bath.

What is vegetable shortning and what can I replace it with? if it's like crisco I will barf. Everything else sounds really great and I would love to make these. Did you check out my no bake coconut balls? I added them to the New Years Group.


You could do without the shortening I think if you add a little more peanut butter - would do the trick maybe 2 tsps.
