Bobotie

- 2 slices of stale white bread (remove crusts) shopping list
- 30 ml cooking oil (2 tablespoons + 1 teaspoon) shopping list
- 1 onion, thinly sliced shopping list
- 2,5 ml ground cloves (1/2 teaspoon) shopping list
- 5 ml crushed garlic (1 teaspoon) shopping list
- 2,5 ml salt (1 teaspoon) shopping list
- 10 ml curry powder (2 teaspoons) shopping list
- 5 ml turmeric (1 teaspoon) shopping list
- 500 g beef mince ( 3 cups) shopping list
- 2 eggs shopping list
- 30 ml hot water (2 tablespoons + 1 teaspoon) shopping list
- 25 ml lemon juice (2 tablespoons) shopping list
- 25 ml sugar (2 tablespoons) shopping list
- 250 ml raisins (1 cup) OPTIONAL shopping list
- Topping: shopping list
- 1 egg, lightly beaten shopping list
- 150 ml milk (1/2 cup + 2 tablespoons) shopping list
- bay or lemon leaves for garnishing shopping list
How to make it
- Soak bread in water for 10 minutes.
- Squeeze out excess water.
- Crumble.
- In a large frying pan, heat oil and braise onion until golden - 7 minutes.
- Add the gloves, garlic, salt, curry and turmeric.
- Simmer for 5 minutes.
- Break eggs into large bowl and beat lightly.
- Mix inwith the mince aswell as the raisins.
- Add the onion mixture + hot water, lemon juice, crumbled bread and sugar.
- Mix well together.
- Spoon into a well greased oven proof dish.
- Bake for 40 minutes at 160 degreesC (320 degrees F) or until golden brown.
- Remove.
- Topping:
- Combine egg and milk.
- Mix well.
- Pour over bobotie.
- Arrange leaves as garnish.
- Return to oven and bake for 10 minutes at 180 degrees or until topping is set.
- Serve with rice or salad.
