This is a very traditional recipe. Serve with rice. Very, very tasty. This is a light textured, curry flavored meat loaf smothered in a golden savory egg topping.

Ingredients
  • 2 slices of stale white bread (remove crusts)
  • 30 ml cooking oil (2 tablespoons + 1 teaspoon)
  • 1 onion, thinly sliced
  • 2,5 ml ground cloves (1/2 teaspoon)
  • 5 ml crushed garlic (1 teaspoon)
  • 2,5 ml salt (1 teaspoon)
  • 10 ml curry powder (2 teaspoons)
  • 5 ml turmeric (1 teaspoon)
  • 500 g beef mince ( 3 cups)
  • 2 eggs
  • 30 ml hot water (2 tablespoons + 1 teaspoon)
  • 25 ml lemon juice (2 tablespoons)
  • 25 ml sugar (2 tablespoons)
  • 250 ml raisins (1 cup) OPTIONAL
  • Topping:
  • 1 egg, lightly beaten
  • 150 ml milk (1/2 cup + 2 tablespoons)
  • bay or lemon leaves for garnishing

Directions
  1. Soak bread in water for 10 minutes.
  2. Squeeze out excess water.
  3. Crumble.
  4. In a large frying pan, heat oil and braise onion until golden - 7 minutes.
  5. Add the gloves, garlic, salt, curry and turmeric.
  6. Simmer for 5 minutes.
  7. Break eggs into large bowl and beat lightly.
  8. Mix inwith the mince aswell as the raisins.
  9. Add the onion mixture + hot water, lemon juice, crumbled bread and sugar.
  10. Mix well together.
  11. Spoon into a well greased oven proof dish.
  12. Bake for 40 minutes at 160 degreesC (320 degrees F) or until golden brown.
  13. Remove.
  14. Topping:
  15. Combine egg and milk.
  16. Mix well.
  17. Pour over bobotie.
  18. Arrange leaves as garnish.
  19. Return to oven and bake for 10 minutes at 180 degrees or until topping is set.
  20. Serve with rice or salad.
