Ingredients
  • 24 ounces of sauerkraut, drained and rinsed
  • 1 large onion, chopped
  • 2 Fuji apples, peeled and chopped (or a Rome apple would work) We love Fuji's
  • 1/2 cup of raisins
  • 1 can of water chestnuts, drained and chopped
  • 1/4 cup of brown sugar
  • 1/2 teaspoon of caraway seeds
  • 1 bay leaf
  • 1/2 teaspoon of poultry seasoning
  • 1 cup of apple juice
  • 1 can of low sodium chicken broth
  • 4 boneless skinless chicken breasts/or 6 to 8 boneless skinless chicken thighs
  • salt and pepper.

Directions
  1. Drain and rinse sauerkraut.
  2. Layer kraut, onions, apples, raisins, water chestnuts in slow cooker.
  3. Sprinkle with caraway, poultry seasoning and brown sugar . Tuck bay leaf in the kraut.
  4. Season both sides of chicken with salt and pepper lightly.
  5. Layer on top of the kraut mixture.
  6. Pour the apple juice and broth around the chicken
  7. cover and cook on low 8 hours.
  8. Serve with mashed potatoes or mashed rutabagas.
  9. Can add 1/2 cup of white wine and 1/2 cup of apple juice for a more savory flavor

This sounds good, the first time I saw a recipe for chicken and sauerkraut I thought yuk - till I tried it and it was really very good. I make it alot now, just seems like chicken and sauerkraut goes together like ribs and sauerkraut. Have to post my chicken recipe for you to try :)


I love chicken and I love sauerkraut so this is sure to be a hit with our family. I have never combined the two but it looks gooooooood! Cheers!!!

Hi Notyourmomma. I wanted to let you know I made this today and it was wonderful. I had two helpings and I'm quite stuffed! The aroma throughout the day as it cooked was very appetizing. I couldn't wait to eat! The sauerkraut, raisins, fuji apples and your list of seasonings were delicious! I followed the recipe to the tee. As you suggested I even made mashed potatoes that went perfectly with this dish. Well done and I wish I could give you two fives!


Wow! Haven't ever tried chicken and sauerkraut together...will have to try this recipe next time I make sauerkraut! Read all the positive comments. I just popped the casserole in the oven at 325 and will cook it for about 3 hours. Thanks for the comments!
