This is a fluffy pink parfait thats pretty to set your table with during the holidays..I think you will really like this.... Put them in pretty glasses ...L & T magazine

Ingredients
  • 1 can whole cranberry sauce (16 ounces)
  • 1 cup cranberry juice
  • 1/2 teaspoon grated orange zest
  • 1 package raspberry gelatin (.3 ounces)
  • 1 can evaporated milk, chilled (12 ounces)
  • 1 teaspoon vanilla
  • Whole cranberries for garnish, optional

Directions
  1. In a sauce pan, bring cranberry sauce, cranberry juice and orange peel to a boil; cook and stir until cranberry sauce is melted.
  2. Stir in gelatin until dissloved.
  3. Refrigerare until mixture is the consistency of egg whites, stirring occasionally.
  4. Place a mixing bowl with beaters in the freezer.
  5. Chill until very cold.
  6. Add milk and vanilla to bowl; beat until soft peaks form.
  7. Fold in gelatin mixture.
  8. Spoon into parfait glasses.
  9. Chill 1 to 2 hours or until set.
  10. Garnish if desired.
