  • 24 chicken wings (about 4 1/2 pounds)
  • 2 tablespoons salt
  • 1 tablespoon sugar
  • 6 cups of cold water
  • 1 1/2 tablespoons paprika
  • 2 teaspoons cayenne
  • 2 teaspoons black pepper
  • 1 tablespoon garlic powder or fresh minced garlic
  • 1 tablespoon onion powder
  • 4 tablespoons unsalted butter
  • 4 tablespoons margarine
  • 1/2 cup red hot sauce
  • 1 quart vegetable oil
  • celery sticks
  • blue cheese dressing

Directions
  1. Cut off and discard the small wing tip from each wing.
  2. Then cut the remainder of the wing into 2 pieces.
  3. Mix salt, sugar, and water in a large bowl and submerge wings for 20 minutes.
  4. Remove wings from water.
  5. Rinse and dry thoroughly with paper towels.
  6. Combine paprika, cayenne, black pepper, garlic powder, and onion powder and put in a large bowl.
  7. Add wings and turn them, using a large spoon.
  8. Thoroughly coat them with the spices.
  9. Melt butter and margarine in a small saucepan.
  10. Add hot sauce and bring to a simmer.
  11. Turn off heat and set aside.
  12. Heat oil to 375 degrees.
  13. Fry all the pieces that resemble small drumsticks together for about 11 minutes.
  14. They should be golden brown.
  15. Flatter looking pieces should take about 10 minutes to fry.
  16. Remove wings and drain on paper towels.
  17. Place all the wings together in a bowl and pour the butter mixture over them.
  18. Turn the wings in the sauce.
  19. Remove wings to a serving platter.
  20. Serve immediately with celery sticks and blue cheese dressing.

This sounds wonderful, but I don't like the drippy wings. I would put them back into a 350*F oven for about 5-8 minutes to dry them out a bit.


Thanks for the feedback dandelion. I don't recall them being particularly drippy at the time. All I remember is that the recipe surpassed my expectations. You never know when you are trying something for the first time.


Instead of blue cheese dressing try with Tzatziki sauce.Tzatziki Sauce:
16 ounces plain yogurt
1 medium cucumber, peeled, seeded, and finely chopped
Pinch kosher salt
4 cloves garlic, finely minced
1 tablespoon olive oil
2 teaspoons red wine vinegar
5 to 6 mint leaves, finely minced

Place the yogurt in a tea towel, gather up the edges, suspend over a bowl, and drain for 2 hours in the refrigerator.
Place the chopped cucumber in a tea towel and squeeze to remove the liquid; discard liquid. In a medium mixing bowl, combine the drained yogurt, cucumber, salt, garlic, olive oil, vinegar, and mint. Serve as a sauce for gyros. Store in the refrigerator in an airtight container for up to a week.

Yield: 1 1/2 cups

I have been looking for a great wings recipe...this is just the thing! Thanks...The Superbowl is coming soon!


Way too many ingredients to be called Buffalo Wings.
Frank's hot sauce, butter oil for deep frying or a 450 deg oven for 45 minutes, poor sauce over the hot wings put back in the oven for 10-15 minutes.


This recipe sounds delicious! Being that I don't live in the USA, too, I appreciate the fact that you didn't include ready-made sauces in your ingredient list. :) yay!
