Overnight Berry Coffee Cake Recipe

Ingredients

2 cups flour

1 cup sugar

1/2 cup brown sugar

1 tsp baking powder

1 tsp soda

1 tsp ground cinnamon

1/2 tsp salt

1 cup buttermilk

2/3 cup butter or margarine, melted

2 eggs, beaten

1 cup fresh or frozen raspberries or blueberries

Topping:

1/2 cup brown sugar

1/2 cup chopped nuts

1 tsp ground cinnamon

Directions

In a large bowl, combine flour, sugars, baking powder, baking soda, cinnamon and salt.

In a seperate bowl, combine buttermilk, butter and eggs; add to dry ingredients and mix well untill blended.

Fold in berries.

Pour into a greased 13 inx 9 in. 2 in. baking pan.

Combine topping ingredients; sprinkle over batter

Cover and refrigerate several hours or overnight.

Uncover and bake at 350* for 45-50 minutes.

See Michelle, you already HAD the perfect coffeecake for your mom (or was it MIL?)...this sounds (and looks) incredibly good - I love lots of fruit in a coffeecake. I love the picture, too! I REALLY love that you can make it ahead - so perfect for company...
