Thin New Hampshire Maple Syrup Pancakes Recipe

Ingredients

1 cup all purpose flour

1 1/2 teaspoons baking powder

1 tablespoon real maple syrup

1 egg, beaten

1 1/4 cups milk

3 tablespoons margarine or butter, melted

Directions

In a large bowl, sift together the flour and baking powder.

In a separate bowl combine the maple syrup, egg, and milk.

Add the liquid mixture gradually to the dry ingredients.

Stir until moistened.

Add the margarine or butter.

The batter should be fairly thin.

Add more milk if necessary.

Pour into a greased electric skillet or pan and cook until bubbles come to the surface and the edges are done.

Turn and brown the other side.

Makes 8 to 10 small pancakes

Don't even need syrup. Tonight I am making some applesauce spice cakes with Maple brown sugar frosting. I bet the frosting would be great inside one of these rolled up. I am tinkering with it right now. If it works out I'll post it.

Pancakes are one of my weakness - along with cookies and scones - this is a great version with the syrup already in them. I'll be rolling bacon or sausage in them for contrasting taste. = )
