This is a favorite pancake recipe that is very quick to make and makes a very thin, crepe like pancake. I think the flavor of these pancakes is sublime.

Don't even need syrup. Tonight I am making some applesauce spice cakes with Maple brown sugar frosting. I bet the frosting would be great inside one of these rolled up. I am tinkering with it right now. If it works out I'll post it.

Pancakes are one of my weakness - along with cookies and scones - this is a great version with the syrup already in them. I'll be rolling bacon or sausage in them for contrasting taste. = )
