How to make it

  • Preheat oven to 350F. Lightly grease a 9” round pan.
  • Combine the rice and tapioca flours, sugar, baking soda, baking powder, and salt in a large bowl.
  • In a separate bowl, whisk together egg, buttermilk and oil.
  • Pour into the dry mix and stir just until the dry ingredients are moistened.
  • Bake for 45 minutes, and cool 10 minutes before un-moulding and cooling completely on a wire rack.
  • Wrap bread in aluminium foil, let stand overnight before serving.

    I just made some ,very similiar recipe but the one I made also called for a 1/2 Tsp gelatin powder.Very good texture.Tasted good.People watch how much salt as the baking soda is salty too.
